Hello!
My name is Jennifer, and I wanted to share my story so I
learned how to put this blog/website
together.
So, a
few years ago I was diagnosed with hypoglycemia, which,
in it's literal terms mean "blood that is not sweet
enough" or that I did not have high enough blood sugar. I
had thought I was consuming enough sugar, but I later
learned that I was consuming the "wrong" kinds of
sugar.
I was actually in the grocery store shopping
when I dropped to the ground and started having a seizure
(which is one of the worst effects of hypoglycemia).
Fortunately I was rushed to the hospital and they were able to
get my blood sugar level back to a healthy level. The
doctors told me I needed to start eating foods that were
going to more beneficial to me.
That day, however, was the scariest day of my
life. After that incident I made a lifestyle change and
completely flipped my normal diet, which I thought was good,
around. I started to consume better, and more natural forms of
glucose that would help with my condition and eating low
glycemic recipes did just that.
The only problem I found, however, was that I
was running out of ways to prepare the foods I should be
eating. Everything was starting to taste so bland and like I
came straight from a Native American tribe who only eats
fruits, nuts, veggies and lean meats. There was no pizzazz
to my cooking and I love to cook!
After I got fed up with the way my diet was,
I went online looking for a cookbook that had low glycemic
recipes in it. I was pleasantly surprised as to what I found.

One of the nice things about this cookbook of
low glycemic recipes is that it has deserts! I don't know about
you but, I can't go too long without enjoying something sweet.
Also - one surprising fact I learned from using this cookbook
was the good and bad seasonings to use! Anyway, enough of my
rambling, like I said, I just thought I would make this blog to
let other people know that this very valuable resource was out
there (because it took a lot of searching on my part to
find!)

so here is one that I really like!
GRILLED TOMATO AND BASIL CHICKEN BREAST (an amazing low
glycemic recipe!!)
Prep Time: about 20 minutes
Ingredients
4-5 chicken breasts
1 brown onion, (I like mine finely chopped.)
4 cloves garlic, minced.
2 stems of fresh basil leaves, finely chopped - a nice pesto
would work also
Extra Virgin Olive Oil - about 2 Tbs.
A nice selection of vegetables chopped up to set the chicken
on would be perfect (this is up to you,
1 small sweet potato cubed
1 can Italian tomatoes (should have no added sugar).
PROCESS
Brown the chicken for 5 to 10 minutes in a frying pan with a
little oil. Season the chicken (if you want) with salt and
pepper. Be sure not to cook the chicken all the way through -
we dont want dry chicken. Remove from the frying pan and put to
one side.
In the same pan, fry the onion and garlic gently, until
golden brown. Add the basil and canned tomatos. After you have
added these two things, you can put the chicken back into the
frying pan. Simmer until the chicken is cooked, about 10- 15
mins. Cut through a piece of chicken to check if it is
done.
In a separate pan, add some oil, a clove of chopped garlic
and the vegetables you chose. (If you prefer a softer garlic
flavor, brown the garlic before adding vegetables.) Salt and
pepper to taste.
In a saucepan, add about 1/2 cup of water and heat until
boiling. Add the sweet potato pieces and simmer approx 7
minutes until tender.
Once this process is done - you can serve your family and
enjoy the meal! This is one of my favorite low glycemic
recipes!
